Ingredients:
1 deep dish pie crust
2 cups shredded zucchini
¼ t garlic powder
4 T butter divided
½ lb sausage
¼ t oregano
¼ t basil
¼ t Italian seasoning
1 c shredded Swiss cheese
4 eggs
1 c milk
½ c evaporated milk
¼ c parmesan cheese
½ t salt
¼ t white pepper
Directions:
- Prick pie crust with fork. Bake 8 minutes in 450 oven – set aside.
- Sauté zucchini in 2 T butter for 5 minutes. Add garlic powder. – set aside
- Sauté crumbled sausage in 2 T butter. Add seasonings, brown and drain.
- Put zucchini in bottom of crust, add sausage, and shredded Swiss on top.
- Beat eggs lightly. Add milk, evaporated milk, parmesan cheese, salt and pepper. Blend well.
- Pour over zucchini mixture.
- Bake at 450 for 15 minutes, reduce to 350 bake additional 15 minutes or until set.
- Let stand 15 minutes before serving.
