Ingredients:

1 deep dish pie crust

2 cups shredded zucchini

¼ t garlic powder

4 T butter divided

½ lb sausage

¼ t oregano

¼ t basil

¼ t Italian seasoning

1 c shredded Swiss cheese

4 eggs

1 c milk

½ c evaporated milk

¼ c parmesan cheese

½ t salt

¼ t white pepper

 

Directions:

  1. Prick pie crust with fork.  Bake 8 minutes in 450 oven – set aside.
  2. Sauté zucchini in 2 T butter for 5 minutes. Add garlic powder. – set aside
  3. Sauté crumbled sausage in 2 T butter. Add seasonings, brown and drain.
  4. Put zucchini in bottom of crust, add sausage, and shredded Swiss on top.
  5. Beat eggs lightly. Add milk, evaporated milk, parmesan cheese, salt and pepper. Blend well.
  6. Pour over zucchini mixture.
  7. Bake at 450 for 15 minutes, reduce to 350 bake additional 15 minutes or until set.
  8. Let stand 15 minutes before serving.
